The Squeaky Veg Test

Screen Shot 2014-11-13 at 16.08.55While picking some yummy fresh kale and PSB, I squeaked and cracked my way through the rows of brassica plants – and the thought occurred to me that really all our greens should squeak before we cook them, to show how fresh they are. When they are super fresh and just picked, they are still full of life and pretty rigid; it’s only after they are picked and lose water and cell mass that they go limp and floppy; flapping, not squeaking. Give your greens a squeeze to hear and feel how fresh they are!
